
17 Jul Spicy “Pina Colada” Bowl

What happens when you mix pineapple, coconut milk, green pepper and green onions together? Magic. Seriously. When I served this drink to my neighbours at a taste test, they couldn’t believe how amazing it tasted.
Refreshing and delicious, top it with pumpkin seeds for an extra shot of healthy fats, fibre and magnesium among other things. More about the health benefits of pumpkin seeds.
Serve it up in margarita glasses for a creative poolside drink, or add unsweetened, shredded coconut and pumpkin seeds and nuts for a satisfying meal.
Spicy Pina Colada Bowl
- 1 can (398 mL) pineapple chunks, canned in pineapple juice (OR 1 ½ cup fresh pineapple cubes)
- ½ cup coconut milk
- ½ cup water
- 1 Tbsp chopped green bell pepper
- 1 Tbsp green onion
- Pinch of salt and cayenne pepper
Directions:
- Blend all ingredients until smooth.
- Garnish with cayenne pepper, finely minced green pepper and/or pumpkin seeds.
