                              With the heat and humidity smothering Toronto, eating watermelon is a smart way to stay cool and hydrated. Most watermelon salads combine feta and mint. This version offers an Asian twist.
                                        Watermelon Salad With A Curry Twist
                                      
                                    
Ingredients
- 1/2 small seedless watermelon
- 3 tbsp rice vinegar
- 1 tbsp olive oil
- 1 tbsp chopped fresh basil
- 1/2 tsp curry powder
- 1/2 tsp grated ginger
- 1 green onion, sliced
- pinch of cayenne
Instructions
- Chop watermelon in approx. 1″ cubes. Place in large bowl.
- In a small bowl, whisk together remaining ingredients. Add to watermelon.
- Toss to coat well. Place in fridge to “marinate” for 1/2 hour.
